Your kidneys have many roles in keeping you healthy. Potassium is a mineral involved in how muscles work. When your kidneys don’t work properly, potassium builds up in your blood. Potassium is found mainly in fruits and vegetables. Avoid certain fruits and vegetables and limit the amount of others.

Potassium-rich foods to avoid:
Melons such as cantaloupe and honeydew (watermelon is okay)
Winter squash
Cooked greens - spinach, kale, collards, Swiss chard
Brussels sprouts

5-Minute Meal Prep

Fruit Salad: Make a quick, antioxidant-rich fruit salad with whatever berries you have on hand (raspberries, strawberries, grapes, blueberries). Toss with fresh lime juice and chopped mint.

Roasted Cauliflower: Toss cauliflower in olive oil and roast at 400F for 15 minutes to caramelize and bring out their natural sweetness. Lightly season with garlic powder and black pepper and a squeeze of lime juice.
