Store in the freezer to maximize shelf life. To freeze, wrap ginger in plastic and store in an airtight container.
Prepare ginger paste by mashing grated ginger with a pinch of salt into a paste. Spread a thin layer on to plastic wrap, roll up and freeze. Cut and defrost as needed.
If storing in the fridge, keep ginger in a sealed paper bag.
