Ingredients


1 Apple Sliced
3 Stalks Of Celery Shaved
2 Cups Of Arugula
¼ Cup Of Chopped Peanuts
Dressing:
1 Tablespoon Soy Sauce
2.5 Tablespoons Tahini
1 Teaspoon Grated Ginger
1 Teaspoon Fish Sauce
1 Teaspoon Lemon Juice
1 Jalapeño Seeded And Minced

Directions


  1. Shave the celery by running a peeler along the stalk. You should get thin ribbons.
  2. Mix the celery ribbons with the apple, peanuts, and arugula.
  3. In a small mixing bowl, mix together the soy sauce, tahini, ginger, jalapeño, lemon juice and fish sauce. Mix the dressing well with the salad and serve.

Ingredients

1 Garlic Clove, Minced

1 Shallot, Minced

1 Teaspoon Dijon Mustard

3 Tablespoons Cider Vinegar

¼ Cup Extra-Virgin Olive Oil

½ Teaspoon Salt To Taste

Pepper To Taste

1 Bunch Celery, Sliced Thinly On The Bias

1 Red Apple, Sliced Thinly

¼ Cup Pumpkin Seeds

½ Cup Shaved Parmesan Or Pecorino

½ Cup Pomegranate Arils

Fresh Mint, Minced

Directions

  1. In a jar or small bowl, combine the garlic, shallot, mustard, vinegar, olive oil, salt, and pepper. Whisk or shake to emulsify and season to taste. 
  2. In a serving bowl or on a platter, toss the celery and apple with the salad dressing to coat. Top with pumpkin seeds, cheese, pomegranate, and mint.

Ingredients

12 Ounces Fresh Cranberries 

1 Cup White Sugar

1 Red Apple, Peeled And Diced

¼ Teaspoon Salt

1 Cinnamon Stick, Optional

2-3 Star Anise, Optional

Directions

  1. Sort through the cranberries and remove any sunken berries. 
  2. In a medium saucepan, combine the cranberries, sugar, apple, salt, cinnamon stick, star anise, and ¾ cup water. Bring to a boil, stirring to dissolve the sugar. 
  3. Reduce the heat to low and simmer for about 15 minutes, until the cranberries soften, and the sauce thickens. Mash the sauce gently with a spoon to break down the apples and some of the cranberries, leaving a chunky sauce. Season to taste with salt. 
  4. Cool to room temperature. Remove the cinnamon and anise before serving.

Ingredients

1 Tablespoon Unsalted Butter

1 Large Apple, Diced (peeled if you like)

3 Cups Chopped Kale

½ Cup Quick-Cooking Grits

¼ Cup Grated Cheddar Cheese

Salt And Pepper To Taste

Directions

1.     Bring 1½ cups of salted water to a rapid boil in a small saucepan.

2.     Melt the butter in a large skillet over medium heat. Add the apple and cook, stirring, until softened and starting to caramelize, about 4 minutes. Add the kale, cover, and cook until wilted, 2-3 minutes. If the kale is not wilting down, add a few tablespoons of water to the skillet and cover.

3.     When the water is boiling, slowly pour in the grits, whisking constantly. Reduce the heat to medium-low, cover, and cook for 5 minutes, until thick and creamy. Stir every 1-2 minutes to prevent burning. 

4.     Turn off the heat and season the grits with salt and pepper. Gradually whisk in the cheese until melted. Add more water if the grits become too thick. 

5.     Divide the cheesy grits between bowls and top with apples and kale. 

Braised Red Cabbage with Apples and Onions

1 Red Cabbage, Quartered and Sliced
⅓ Cup Wed Wine
2 Tablespoon Red Currant or Plum Jam
2 Bay Leaves
1 Tablespoon Soy Sauce
½ Yellow Onion Sliced
1 Teaspoon Salt
3 Cups of Water
1 Apple Cored and Sliced
1 Teaspoon Butter
1 Tablespoon Apple Cider Vinegar

Directions

  1. In a large saucepan, add the butter on medium heat. Saute the onions and apples until soft and onions are translucent.
  2. While the onions and apples are sauteing, quarter and slice the red cabbage.
  3. Add the sliced cabbage, red wine, jam, soy sauce, apple cider vinegar and 1 cup of water. Keep adding more water as it simmers.
  4. Simmer for 30-40 min or until cabbage has completely softened and the liquid has reduced to a tablespoon.
